Waterford Distillery is a modern whisky distillery located in Waterford, Ireland. Founded by Mark Reynier, the former CEO of Bruichladdich Distillery, it began production in 2015. Waterford Distillery is unique in its approach to whisky-making, focusing on terroir and the influence of different barley varieties on the final flavor profile of its whiskies. They source barley from local farms and aim to express the distinct characteristics of each farm’s terroir in their spirits. Waterford’s whiskies are produced using traditional methods, including fermentation in wooden washbacks and distillation in copper pot stills. Their releases include single malt whiskies that showcase the diversity of Irish terroir and barley varieties. Waterford Distillery has garnered attention for its innovative approach and commitment to transparency in whisky production.

The Arcadian Series project saw organic barley farmers John Mallick, Paddy Tobin, Alan Jackson, Pat and Denis Booth, Jason Stanley and Trevor Harris come together to contribute towards what is thought to be Ireland’s first organic-certified whiskey. It is named after the Ancient Greek Goddess Gaia, who represents the personification of the Earth.

After distillation, Gaia has seen a complex period of maturation using the following casks…

  • 42% First-fill American Oak
  • 17% Virgin American Oak
  • 23% Premium French Oak
  • 18% Vin Doux Naturel oak – sweet fortified wines

Released in Autumn 2020, 18,000 bottles were allocated for Europe and Asia and an additional 6,000 bottles were made available to the United States.
